Reserve the remaining cordial to use in morning drinks, puddings, or to make another batch of bikinis.

Bikini Recipe

Serves 10 servings

Ingredients for the Clementine Syrup (makes 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g caster sugar

To make the Drink (yields 850ml, to serve 10)

400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch

Directions

Making the Cordial: Put all the items in a saucepan, heat until it reaches a light boil, stirring so the sugar melts. Then, take off the burner allowing it to cool down completely. Decant into an sealable bottle, seal and refrigerate it in the fridge, it can be stored for around one month.

To make Cocktail Base: Pour every spirits and syrup into a large bottle, allow it to infuse for an hour, then strain , ideally through muslin, to ensure it's perfectly clear.

For serving: Pour 85ml of the premix to a stirring glass containing ice, and stir lightly for one minute to chill. Pour to a chilled martini glass or a similar vessel, garnish with the cranberries adding the final touch with a brief mist with the mandarin essence above the glass.
